Poached Egg & Avocado on Toast

Fuel your day with a delicious, filling breakfast this morning.

Preparation time: 4 minutes
Approximately 280 calories.
Ingredients:
- 1 piece of toast
- 1 egg
- 1/2 an avocado
- Salt & pepper
- Lemon juice
- Chilli flakes (not essential)
- Coriander (not essential)
Start by adding boiling water into a saucepan. When the water starts to boil, reduce the temperature down to a simmer.
Next, using a fork, mash the avocado and season with salt, pepper, lemon juice, chilli flakes and coriander. Then, put your bread in the toaster.
Crack the egg carefully into the saucepan and allow to poach for 3-4 minutes.
Serve the toast on a plate and add the mashed avocado mixture on top. When the egg is ready, drain with a slotted spoon and place on top of the avocado.
Season again with salt, pepper and chilli flakes and voila! I had mine with some fresh spinach but it is not essential.
