Halloumi & Vegetable Skewers

Preparation and cooking time: 25 minutes

Approximately 40 calories per skewer.
⠀⠀⠀⠀⠀⠀⠀⠀
Ingredients: ⠀⠀⠀⠀⠀⠀⠀⠀
- Halloumi
- Red pepper
- Green pepper
- Courgette
- Red onion
- Cherry tomatoes
- Lemon juice
- Oregano
- Salt & pepper
⠀⠀⠀⠀⠀⠀⠀⠀
Preheat your oven to 160 degrees.
⠀⠀⠀⠀⠀⠀⠀⠀
Start by chopping all ingredients into similar sized square shapes and put them into a large mixing bowl.
⠀⠀⠀⠀⠀⠀⠀⠀
Pour 2 tbsp of oregano, 2 tbsp lemon juice, salt and pepper over the top and mix well to cover all ingredients.

(If you’re using wooden skewers I recommend soaking them under a tap to avoid the ingredients getting stuck to them once cooked!)
⠀⠀⠀⠀⠀⠀⠀⠀
Next, assemble halloumi and vegetables onto the skewers and place on a baking tray.
⠀⠀⠀⠀⠀⠀⠀⠀
Cook for 10 minutes, then turn the skewered over and cook again for 5/10 minutes, making sure the halloumi doesn’t melt.

Perfect for BBQs, or served with potatoes and a side salad. Enjoy! ☺️
