American Pancakes

Is there anything better than making pancakes on a Sunday morning? Treat yourself to these delicious American style pancakes!

Preparation and cooking time: 40 minutes
Approximately 350 calories per serving.
Recipe serves 4 people. ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀
Ingredients: ⠀⠀⠀⠀⠀⠀⠀⠀
- 200g self raising flour⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀
- 2 tbsp baking powder⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
- 1 tbsp caster sugar⠀⠀⠀⠀⠀⠀⠀⠀
- 3 large eggs ⠀⠀⠀⠀⠀⠀⠀⠀
- 25g of melted butter (+ 1 tbsp for cooking)⠀⠀⠀⠀⠀⠀⠀⠀
- 200ml milk⠀⠀⠀⠀⠀⠀⠀⠀
- Blueberries⠀⠀⠀⠀⠀⠀⠀⠀
- Maple syrup ⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀

Add all dry ingredients into a large mixing bowl and combine. Create a well in the centre of the mixture and add the eggs, melted butter and milk. Whisk ingredients together, preferably with an electric whisk, until mixture is smooth.

Heat a tbsp of butter on a non stick pan over a medium heat. Pour the batter into the middle of the pan, approx 8cm wide (I do mine 1 at a time but if you have a bigger pan you can do more). Cook the pancake for 2 minutes, or until a lot of bubbles appear on the surface, then flip and cook for 1 minute on the other side.

Repeat this process for all pancakes and serve with maple syrup and blueberries, or your favourite toppings!
