Healthy Turkey Meatballs

Try these healthy alternative slow cooker meatballs. Perfect served with spaghetti, or on their own with a side salad and couscous. They are fine to freeze too, so great for batch cooking.

Preparation time: 1 hour
Cooking time: 5 hours
Approximately 260 calories per portion. This recipe serves 4-5 people.
Ingredients:
Meatballs - 400g of lean turkey mince
- 4 tbsps of porridge oats
- Pinch of paprika
- 2 garlic cloves
-Salt & pepper
-Frylight/low calorie cooking spray
Sauce
- Frylight/low calorie cooking spray
- 1 onion (finely chopped)
- 2 carrots (finely diced)
- 2 celery sticks (finely diced)
- 2 garlic cloves (finely diced)
- Can of chopped tomatoes - 2 tbsp of mixed herbs
- 2 tbsp of chopped basil
Heat your slow cooker.
Heat frylight in a non-stick pan and fry the onions, carrots, celery and garlic for 1 minute. Pour in the chopped tomatoes, add the mixed herbs and chopped basil then transfer the mixture into the slow cooker.
Tip the turkey mince into a large bowl and add the oats, paprika, garlic and season with salt and pepper. Mix everything together until combined, divide the mixture and roll into 20 even balls.
Heat frylight in a non-stick pan and gently cook the meatballs until they start to brown. Add them to the slow cooker and leave to slowly cook for 5 hours.
I served mine with curried couscous and a side salad, but can be served with absolutely anything!
